Lamb Shank
Step 1: Make a few incisions in each lamb shank with a sharp knife and place in a bowl with red wine and orange juice.
Step 2: Using a pestle and mortar, crush the herbs (rosemary and thyme) and add to the bowl of lamb shanks along with the garlic and peppers. Marinate for 1 hour or overnight covered in the fridge.
Step 3: Preheat the oven to 200 degree Celsius for cooking the lamb shanks.
Step 4: Transfer the lamb shanks to a large roasting tin and pour over the marinade. Cover with foil and roast for 1 hour.
Step 5: Lift up the foil, turn and baste the shanks, then add the peppers and onions.
Step 6: Re-cover and roast for another hour, then remove the foil, crush the garlic into the juices and season.
Step 7: Add the tomatoes and cook, uncovered, for about 10 minutes.
Step 8: The lamb shanks are prepared, serve it hot.
